Ingredients:
- ½ cup coconut sugar
- ½ cup pure maple syrup
- 3 Tbsp salted grass-fed butter, cut into pieces
- ½ cup A2/A2 Organic Heavy Whipping Cream at room temperature
- 1 tsp pure vanilla extract
- ¼ tsp sea salt
Method:
1. In a small saucepan, combine the coconut sugar and maple syrup. Heat over medium low heat, stirring occasionally, until the mixture starts bubbling.
2. Once it’s bubbling, stop stirring and let it cook for about 8 minutes, swirling the pan occasionally, until the mixture reaches 230–235°F. It should darken slightly and begin to thicken.
3. Whisk in the butter until melted and smooth. Slowly pour in the heavy cream, whisking constantly until the mixture is glossy and cohesive.
4. Continue to simmer for another 5-8 minutes or until the thermometer again reads 230–235°F.
5. Remove from heat and stir in vanilla and sea salt. Let it cool for 45 minutes or up to a few hours — it will thicken significantly as it cools.
6. Store in a sealed jar in the refrigerator for up to 2 weeks. If desired, rewarm gently before serving, either in the microwave for 10-15 seconds or in a saucepan over low heat. Enjoy!
