Momma Stephanie's Homemade Roasted Granola

From the Kitchen of Stephanie (Momma) Alexandre

Granola is one of our family's favorite snacks for many reasons: it is healthy, easy to make, and DELICIOUS. This not-too-sweet recipe is the one we make in our own home and add to our Certified Regenerative A2/A2 Organic Yogurt for a quick morning or afternoon snack. It is also the perfect ready-made treat to bring out when guests are visiting!

 - 3 cups rolled oats
 - 2+ cups raw nuts (any variety but we like almonds, cashews, walnuts, and pistachios)
 - ¾ cup shredded unsweetened coconut

   To Heat on Stove Top
 - 1 Tbsp vanilla
 - ¼ Cup coconut oil
 - 1/3  Cup maple syrup
 - ¾ tsp sea salt
 - 2 tsp pumpkin pie spice or cinnamon

   To Add After cooking
 - 3/4 cup dried cherries, cranberries, and/or raisins

 - Preheat oven to 250 degrees F
 - Heat the vanilla, coconut oil, maple syrup, sea salt, and spice in small saucepan, stirring until all items are combined
 - Combine all ingredients except for dried fruit, drizzle the heated liquid mixture over top and mix well with a wooden spoon
 - Line a large baking sheet with parchment paper and spread mixture evenly on top
 - Bake for 1 hour, mixing every 20 mins so all sides brown evenly
 - Remove granola from oven and let cool
 - Stir in dried fruit
 - Serve in bowl with serving spoon, add directly on top of bowls of yogurt, or allow to cool and store in an airtight container for up to 2 weeks

Some notes:
 - Our family isn’t fond of added fruit, so we choose to add in lots of nuts and seeds like hemp hearts and chia seeds
 - Sometimes it get too “roasted”
 - Additional sweeteners can be used as needed
