Protein-Packed Bacon Yogurt Egg Bites

Start your morning off right with these super easy, delicious, and protein-packed egg bites! Two sources of dairy (milk and yogurt) make the egg bites extra fluffy and filling. Top off with A2/A2 Organic Probiotic Sour Cream, avocado, or salsa.

INGREDIENTS FOR 12 EGG BITES

- 6 strips Organic bacon, diced
- 1 small red bell pepper, finely diced
- 1 small onion, finely diced
- 1/2 teaspoon salt
- 3 garlic cloves, minced
- 1 cup spinach, roughly chopped
- 8 large pasture-raised Alexandre Kids Eggs
- ¼ cup A2/A2 Organic 4% Whole Milk
- ½ cup A2/A2 Organic 100% Grass-fed Full Fat Plain Yogurt
- 3/4 cup organic cheddar cheese, shredded

Recipe Note: Feta cheese can be used interchangeably with the cheddar. 

METHOD

1. Preheat your oven to 350°F. Prepare a non-stick muffin tin by spraying it with avocado oil or wiping it with butter to prevent sticking. 

2. Add your bacon to a saute pan on medium heat. Cook until browned and crispy. Set the bacon aside. Drain most of the grease, leaving a small amount to cook your vegetables. 

3. Add your diced bell pepper, onion, and salt and cook for 4-5 minutes or until the vegetables are tender. Add the minced garlic and spinach and cook for 1 additional minute. Remove from the heat and set aside. 

4. Whisk your eggs, milk, yogurt, and cheese together in a medium bowl. 

5. Add a spoonful of the sauteed vegetables to the bottom of each muffin mold until evenly distributed. Next, add the chopped bacon evenly to each mold.  

6. Spoon approximately ¼ cup of the egg mixture into each muffin mold. Use a fork to gently stir the contents until the vegetables are incorporated into the egg.

7. Bake for 25-30 minutes or until the tops are golden and the egg bites are set. Serve warm and enjoy!
