Superfood Power Bowl with Green Goddess Kefir Sauce

Superfood Power Bowl

This zesty, fresh, and vibrant “Power Bowl” is nourishing from the ground up! It’s packed with protein and brings bold flavor to your table. Additionally, it highlights fresh, wholesome, earth friendly ingredients that are thoughtfully prepared with a bright herby Green Goddess kefir sauce to finish it all off. What’s not to love?

Ingredients:

Sweet Potatoes

  • 2-3 medium organic sweet potatoes, scrubbed and cubed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt

Beef

  • 1 lb grass-fed and finished ground beef
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
  • Freshly ground pepper, to taste

Kale

  • 1 large bunch organic kale, stems removed and roughly chopped
  • 1 tablespoon extra virgin olive oil
  • Juice of half a lemon
  • Pinch of salt

Power Bowl

Method:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes with olive oil, garlic powder, and salt until evenly coated. Spread them out in an even layer on the baking sheet and roast for 20-25 minutes, until tender.
  3. While the sweet potatoes roast, cook the rice according to the package instructions. Keep warm once finished.
  4. Heat a skillet over medium-high heat. Add the beef and cook for 5–7 minutes, breaking it up as it browns, until fully cooked and lightly crisp in spots. Remove from heat. Add in garlic, smoked paprika, cumin, salt, and a few cracks of pepper. Stir until combined and set aside.
  5. In a separate bowl add kale, olive oil, juice of half a lemon, and a pinch of salt. Massage the kale with your hands until the leaves are completely coated. Set aside.
  6. To make the kefir green goddess sauce, add the kefir, parsley, cilantro, chives, lemon juice, lemon zest, olive oil, garlic, and sea salt to a blender or food processor. Blend until smooth and creamy. Set aside.
  7. To assemble the bowls, divide the rice among serving bowls. Top with roasted sweet potatoes, cooked beef, and the dressed kale. Drizzle generously with the kefir green goddess sauce and sprinkle with roasted pumpkin seeds. Enjoy!
