In this package, our 2% is homogenized and ultra high temp pasteurized. Our 2% bottled milk is vat pasteurized and non-homogenized. Both reduced fat milks are 100% A2/A2, certified regenerative, humane, and organic, and come from the same pasture-based cows that enjoy life on our northern California grass pastures.
Yes, it is pasteurized and homogenized. Homogenization breaks down the fat molecules to smaller particles so it distributes evenly in the milk and does not all rise to the top (as in our cream-top milk). Homogenization helps extend the shelf life of milk so we can ship it to you across the country! It's the same delicious, nutritious milk - you just don't have to shake it to mix in the cream on top.
Vitamin A fortification is required by the FDA in reduced fat milk because whole milk naturally contains vitamin A.
The natural amount of Vitamin A levels is much lower in 2% milk because vitamin A is fat soluble, and is reduced when some of the fat is removed (like when we standardize our reduced fat milk to 2% milkfat). Therefore, the FDA requires that the Vitamin A be replaced.
The non-fat milk in our 2% Reduced Fat A2/A2 Organic Milk is produced by using a centrifugal separator to separate cream and skim milk from whole milk.
