This whole milk has 4% milkfat, is homogenized and ultra high temp pasteurized. Our bottled whole milk has 6% milkfat, is Vat pasteurized and non-homogenized - which creates cream on top . Both whole milks are 100% A2/A2, certified regenerative, humane, and organic, and come from the same pasture-based cows that enjoy life on our northern California grass pastures.
Yes. Homogenization breaks down the fat molecules to smaller particles so it distributes evenly in the milk and does not all rise to the top (as in our cream-top milk). Homogenization helps extend the shelf life of milk so we can ship it to you across the country! It's the same delicious, nutritious milk - you just don't have to shake it to mix in the cream on top.
This milk comes from cows that consume 80% of their diet from forage and 20% from a certified organic grain blend that includes corn and barley (no soy).
